Chips and salsa are not on my food snob repertoire – unless paired with fresh summer produce. Flavorful salsa can be made with three simple ingredients: fresh garden tomatoes, salt and pepper. But while you’re showering your tomato plants with tender loving care and waiting for the first blooming season, it’s mango sale season at the local grocery stores. This week, they’re on sale at Copps for 99 cents each (try the golden variety). For a quick salsa, mix:
- 2 fresh mangoes, chopped
- 2 tablespoons fresh cilantro, chopped
Let the flavors meld into a sweet, summery tang. Try serving with Sea Salt Rice Chips – a great gluten-free alternative. For further variation, serve with fresh salmon, poultry or as substitute for salad dressing.
