Banana Bonanza

Refurbished Banana Bread  

With no oil, minimal sugar and whole wheat flour, this recipe gives a loaf the equivalent of a healthy face lift.

1 1/2 cup mashed bananas (more or less will just alter the breads’ moistness factor)

2 egg whites (save yolks for decadent desserts such as flourless chocolate cake)

1/4 cup unsweetened applesauce (a healthier substitute for oil)

3 teaspoons vanilla extract

1/2 cup sugar

1 1/4 cup whole wheat flour

1/2 teaspoon baking soda

1 1/4 teaspoon baking powder

1 tablespoon cinnamon (more if desired)

1/4 teaspoon nutmeg

1/2 cup dark chocolate chips

1 – Preheat oven to 350.

2 – Mix dry ingredients in one bowl, wet (plus sugar) in another. Stir and place into a greased loaf pan.

3 – Bake for 20-25 minutes.

4 – Pair with a cold glass of milk, and eat warm so the chocolate can (literally) melt in your mouth.

Banana Protein Muffins

The pervasive problem of baked goods remains that they don’t keep you full. But with yogurt, egg whites and protein powder in lieu of flour, these muffins are bound to keep you full all morning long.

1 mashed banana

1/2 cup plain greek yogurt

3 egg whites

3/4 cup plain oats

1/4 cup brown sugar (or sugar substitute)

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons cinnamon

2 teaspoons vanilla protein powder (or use wheat flour as a substitute)

1/2 cup dark chocolate chips

Mix ingredients and place in muffin tins (preferably reusable silicone liners). Bake for around 15 minutes.

…and if you still have extra bananas… EAT THEM. Plain, with peanut butter, in yogurt, whatever tickles your taste buds.
