Broccoli Fritters

Health-conscious foodies avoid fritters. Cholesterol-packed batter, oil, deep-frying. No thanks. But this recipe calls for minimal oil and a plethora of broccoli. The only fretting health nuts have to worry about is an ever-looming question: Is it rude to eat the last bit? And then, the quintessential philosophical culinary question: To care or not to care…

2 medium broccoli stalks, chopped in 1/2 inch pieces

1 egg

1/2 cup whole wheat flour

1/3 cup grated Asiago cheese

1 clove garlic, crushed

1 teaspoon basil salt (see previous posts)

1 tablespoon olive oil


1 – Chop broccoli and steam until tender, but not fully cooked. Let cool.

2 – Beat egg and add remaining ingredients.

3 – Add broccoli and mash until combined. Spread and heat oil in pan until hot. 

4 – Add broccoli batter, about 1/4 cup at a time and compress the patty down with a spatula. Cook until crisp, about 2-4 minutes on each side.
