How many of you have actually tried to find a sweet that is high in protein, low in sugar, and tastes good? If you’re picturing a Clif or Luna Bar, you’re wrong. Twenty-two grams of sugar is not low. Lucky for you, I have compromise – in the form of cookies that are easy to make, packed with protein, and even have fruit that isn’t from concentrate. Enter the cherry & dark chocolate almond butter cookie.
1 cup almond butter
1 large egg
1/2 cup light brown sugar (lightly packed, as in all baking recipes)
1 teaspoon baking soda
1/2 cup dark chocolate chips
1/2 cup fresh tart cherries
1 – Preheat oven to 350 degrees F
2 – Mix the egg, almond butter, baking soda and brown sugar in bowl
3 – Add the chocolate chips and cherries; lightly mix
4 – Shape your cookies and place on pan
5 – Bake for 7-10 minutes; and do not over bake. Trust me, these babies are infinitely better underdone
6 – Forget about the gym; you haven’t actually consumed that much sugar
